I’ve always been a fan of finding quick and effortless meal options, and canned chicken breast has become my go-to for that reason. There are so many delicious ways to use it, and these keto-friendly chicken nuggets are a perfect example.

These keto-friendly nuggets are not only simple to make but also satisfyingly crunchy. By using a handful of ingredients you probably already have in your pantry, these chicken nuggets come together in no time. Plus, they’re versatile enough to pair with various dipping sauces, making them a new favorite.

Each of these ingredients plays a key role in making these nuggets delicious and satisfying, while also being easy to prepare.

  • Chunk chicken breast: This forms the base of our nuggets, providing that essential meaty texture and flavor. Make sure it’s drained well to avoid excess moisture.
  • Shredded mozzarella cheese: Adds a gooey, stretchy element to the nuggets, binding them together with a creamy finish.
  • Grated Parmesan cheese: This brings a sharp, salty kick, giving the nuggets a rich depth of flavor. 
  • Eggs (beaten): The eggs act as a binder, holding all the ingredients together and giving the nuggets their shape.
  • Ground black pepper: A dash of this spice adds a subtle heat, 
  • Onion powder: Provides a mild sweet onion flavor which complements the chicken perfectly.
  • Garlic powder: Adds a savory aromatic note that balances the richness of the cheese.
  • Hot sauce: Just a few dashes bring a bit of heat, kicking up the flavor for those who like a little spice.

Instructions

  1. First, preheat your oven to 425° F and get a baking sheet lined with parchment paper. 
  2. Drain the canned chicken well using a fine mesh strainer, pressing it with your fingers to remove as much excess moisture as possible. 
  3. In a medium sized bowl, mix the drained chicken with an egg, mozzarella, parmesan, and your preferred seasoning. 
  4. Add a pinch of garlic powder, black pepper, and smoked paprika for flavor.
  5. Use your hands to mold the chicken mixture into bite-size nuggets. 
  6. Place them on your prepared sheet and bake for 18-22 minutes, making sure to flip them halfway through so they cook evenly. 
  7. Serve your nuggets with a delicious dipping sauce like Ray’s bbq sauce or ranch dressing for a tasty finish.
